Description of service
The wet gluten content of the sample is determined using the American Association of Cereal Chemists International (AACCI) Standard Method 38-12.02 (flour and semolina subsequent to milling).
Data is reported on a 13.5% moisture basis for whole wheat and a 14.0% moisture basis for semolina and flour.
It takes 5 days to complete this test.
Service standard
- Documents detailing the results of inspection support services are issued within 2 business days after completion of all required analytical testing or inspection results.
Performance target
- The target for achieving this standard is set at 90%.
